How to prepare these Saint-Nectaire creams ?

For 6 people, you will need the following ingredients :

  • 4 eggs,
  • 200 grams of liquid cream,
  • 180 grams of Saint-Nectaire cheese,
  • Salt,
  • Pepper.
Here are the steps for the recipe :

Preheat the oven to 90°C (194°F).
Separate the egg whites from the egg yolks (we will only use the yolks for this recipe. The whites can be whipped into meringue for another use).
In a mixing bowl, whisk together the egg yolks, cream, and milk.
Season to taste with salt and pepper.
Cut the Saint-Nectaire cheese into small cubes and place them at the bottom of each crème brûlée ramekin (use about 30g per ramekin).Pour the egg mixture over the cheese and bake for approximately 40 minutes.
Allow to cool before serving.

Before serving, sprinkle a layer of brown sugar on top of each ramekin and use a culinary torch to caramelize the sugar like a traditional sweet crème brûlée.
